Blend of egg, miso completes flavor of carbonaraIf you feel like staying at home and eating in on a cold winter night, spaghetti carbonara is the perfect comfort food.
Carbonara, meaning “charcoal workers style” in Italian, is a pasta dish in which black pepper is used to resemble charcoal powder.


"The key is to properly reduce the fresh cream," says Italian cuisine chef Kuniaki Arima. "With added thickness and flavor, it will create a smart aftertaste.”

Arima suggests reducing the whole pack of fresh cream. Leftover portions may be kept in the fridge for several days and used in curries, stews and soups. The amount of miso should be varied according to the saltiness of the cheese. Flat fettuccine may also be used. Salted pork, bacon or sauteed onion may also be added. Serves two.

INGREDIENTS

100 cc fresh cream

1 tsp miso

2 egg yolks

4 tsp powdered cheese (Parmigiano-Reggiano)

Some black peppercorns

200 grams spaghetti

METHOD

Pour fresh cream in small thick pot and place over low heat. If it is about to boil over, shake the pot to reduce temperature. Reduce slowly without burning. Remove from heat when the amount has been reduced to a third and the cream has turned yellowish.

Place the reduced cream, miso, egg yolks and cheese in a large bowl. Coarsely chop peppercorns or squash under the bottom of a bottle.

Bring water with a 1 percent salt content in pot to a boil and cook spaghetti as instructed.

Add cooked spaghetti immediately to bowl and mix swiftly. If sticky, add bit of hot water to loosen. Sprinkle part of black pepper.

Serve on plate and sprinkle with black pepper.

Leftover egg white may be used to make thin cookies. Place 10 grams flour, 10 grams butter, 25 grams powdered sugar, 1/2 to 1 tsp water per egg white in bowl and mix well with whisk. Drop soft mixture on baking sheet, cook for 1 to 2 minutes in oven or toaster oven at 180 degrees. Cookies are done if they spread thinly and turn golden around the edge.
